    INGREDIENTS

    • 1.5kg besan
    • 2 cup Oil
    • 2 tsp salt
    • 1&½  tsp Baking soda
    • 4 tsp ajma(parsley)
    • A little water

    INSTRUCTIONS

    • Add 2 cups oil to 1.5 kg chickpea flour, add 2 tsp salt, 1 & 1/2 tsp baking soda, 4 tsp ajma (parsley) and a little water and knead the flour.
    • mix well.
    • Then add a little water and make the flour medium smooth.
    • The flour should be kept smooth so that the gathiya become very soft.
    • Smooth texture, then add a little flour to check if the oil has arrived.
    • Put a little bit of oil on the gathiya and put a small gathiya of flour on it.
    • It will take the about 2-3 minutes to fry the gathiya.
    • So ready cotton-like soft gathiya.
    • Make it from time to time during the festival and also store it for breakfast in the morning.

  • firstly, do not add rice flour to the dough mixture as gathiya need to be crunchy yet melt in the mouth.
  • additionally, instead of chilli powder, you can use pepper or combination of both.
  • also, make sure to fry in hot oil on medium flame. else gathiya will be raw from inside.
  • finally, gathiya stays good for a month when stored in airtight container.
