    INGREDIENTS

    • 1 cup moong dal
    • ¼ cup water
    • 3 tbsp rice flour
    • 2 green chillifinely chopped
    • 1 inch gingerfinely chopped
    • 2 tbsp onionfinely chopped
    • 2 tbsp corianderfinely chopped
    • 1 tsp jeera / cumin
    • ½ tsp salt
    • ¼ tsp baking soda
    • oil for deep frying

    INSTRUCTIONS

    • firstly, in a large bowl soak 1 cup moong dal for 4 hours.
    • drain off the water and blend to smooth paste adding ¼ cup water & add 1 tsp of chilli-ginger paste & 7-8 nos of garlic.
    • transfer the prepared moong dal batter into bowl.
    • add in 3 tbsp rice flour for crispy vada. add more rice flour if required to get thick batter.
    • add grated potatoes, 1 tsp aniseed, 1/2 tsp hing, 1 tsp cumin, 1 tsp red chilli powder, pinch of turmeric, 1 tsp chilli flex, half lemon juice, 1/2 tsp garam masala, 1 cup onions, 10 gm coriander, 1/2 tsp salt, 2 tsp rise flour.
    • further add ¼ tsp baking soda and give a good mix.
    • now dip your hand in water, and start dropping them one by one to hot oil.
    • keep the flame in lower to medium stir occasionally.
    • also fry the vada till they turn golden brown.
    • drain off the vada on to kitchen towel to absorb oil.
    • finally, serve moong dal vada with coconut chutney or tomato sauce.

    How to make moong dal vada with step by step photo:

    1. firstly, in a large bowl soak 1 cup moong dal for 2-3 hours.
    2. In mixer jar, add 1 tsp of chilli-ginger paste & 7-8 nos of garlic and mix it well.
    3. transfer the prepared moong dal batter into bowl.
    4. Grate 2-potatoes & remove starch.
    5. add grated potatoes, 1 tsp aniseed, 1/2 tsp hing, 1 tsp cumin, 1 tsp red chilli powder, pinch of turmeric, 1 tsp chilli flex, half lemon juice, 1/2 tsp garam masala, 1 cup onions, 10 gm coriander, 1/2 tsp salt, 2 tsp rise flour.
    6. now dip your hand in water, and start dropping them one by one to hot oil.
    7. keep the flame in lower to medium stir occasionally & also fry the vada till they turn golden brown.
    8. finally, serve moong dal vada with coconut chutney or tomato sauce.

    notes:

  • firstly, soak the dal well, else it is difficult to prepare smooth batter without adding much water.
  • also, adding soda is optional. however, it makes vada more fluffy and tasty.
  • additionally, adding onion are optional, if you do not prefer.
  • finally, moong dal vada taste great when served hot and crispy.
